Yoghurt Mixed Berry Parfait Serves 2 or 4

  • 2 cups coconut yogurt (or use dairy yogurt if tolerant)
  • 1 teaspoon vanilla extract
  • 2 1/2 cups mix of raspberries, blueberries, and sliced strawberries
  • 1 cup paleo granola or mix of chopped nuts and seeds

  1. In a medium bowl, stir together yogurt and vanilla.
  2. Add a layer of berries to the bottom of 2 large glasses (or 4 smaller glasses) and sprinkle with granola.
  3. Spoon a layer of yogurt and add berries, and granola. Repeat the layers until all ingredients have been used
  4. Top with granola and berries.
