Ingredients
1 medium onion, finely chopped
1 1/2 tsp ground paprika
1/4 tsp chilli powder
2 garlic cloves, crushed
600g button mushrooms, sliced
1/3 cups light sour cream
1/4 cup 99% fat-free plain yoghurt
2 tbsp flat-leaf parsley, finely chopped, plus extra to serve

Method
Lightly spray a heavy based Dutch Oven with oil and cook onion for 6-8 minutes over medium heat until soft. Add spices and garlic and cook for 1 minute. Add mushrooms and cook for 7-8 minutes, or until tender.
Stir in sour cream and yoghurt. Stir until melted. Stir in chopped parsley and season to taste.
Serve stroganoff sprinkled with extra parsley leaves.
